A lovely creamy custard infused with vanilla.
Try with spiced pear and almond tart.

Cooking Time: 10 - 15 minutes
Herbs and Spices Required:
1 Vanilla Pod
3 egg yolks
2 1/2 oz / 60 g caster sugar
11 fl oz / 315 ml double cream
Herbs and Spices as listed above
Whisk together the egg yolks and the caster sugar until fluffy. Split the vanilla pod lengthways and scrape out the seeds into a pan. Add the cream and heat very gently, taking care not to let it boil. Pour the hot cream over the egg and sugar mixture, stirring gently to mix. Place the lot back in the pan and heat the custard very gently. Stir continually until the custard thickens so it coats the back of a spoon. Allow to cool a little before serving.
