Spicy Spare Ribs (Nyama Choma)

This is an adaptation of a Kenyan way of preparing roast meat. It uses curry flavours in the marinade for the ribs.
Serves: 4 - 6
Preparation Time: 5 minutes plus 1 hour marinating
Cooking Time: 15 minutes
Ingredients
2 lbs / 1 kg spare ribs (Beef or Pork)
juice of 2 lemons
salt and pepper to taste
1 clove fresh garlic minced OR the garlic options below.
Herbs & Spices
1/2 tsp Garlic Salt or 1/4 tsp Garlic Powder
2 tbsp Curry Mild
1 tbsp Coriander Ground
2 tsp Paprika
1 tsp Turmeric
Cooking Instructions
In a large sealable bag combine the lemon juice, garlic (which ever form you are using), and spices and mix well. Add the spare ribs and coat well with the marinade (take care not to puncture the bag!). Seal and leave to marinade for at least 1 hour, but the longer the better.

Heat the grill or the BBQ and place the ribs under/on. be prepared for some spitting. Cook the ribs until brown and sizzling, turning to ensure even cooking. Baste occasionally during cooking with any spare marinade.
