Chilli con Carne (quick recipe)

1lb /450g coarse minced beef
2 tbsp vegetable oil
2 x 14 oz / 300g tins red kidney beans, drained and washed
2 medium onions peeled and chopped
2 cloves garlic, crushed
1 tbsp flour
3 tbsp tomato puree
1 stock cube dissolved in 1 pint of hot water
1 large green pepper, chopped
Herbs & Spices
1/2 tsp or to taste Chilli Ground
1 tsp Cumin Ground
2 tsp Coriander Ground
Cooking Instructions
Put oil, onions and garlic in a heavy saucepan or casserole and fry on medium heat until lightly browned. Turn up heat and add meat, stirring until well browned. Stir in tomato puree and continue to stir for a minute. Add flour and ground chilli, coriander and cumin and stir for a further 30 seconds. Add stock and kidney beans. return to boil and simmer for about 30 minutes. Add green pepper and simmer for a further 5 minutes. Salt to taste and serve with boiled rice, tortillas or water biscuits and a green salad.
