Garlic Mushroom Cups

Delicious crispy garlic cups filled with creamy mushrooms. They can be served hot or cold. These bread cups can be filled with other fillings if desired.

Ingredients
6 slices of brown bread
3 oz / 75g butter
1 oz plain flour
1/4 pint / 150 ml milk
2 - 3 oz button mushrooms
salt and pepper seasoning
Herbs & Spices
1/2 tsp Garlic Chips
2 tsp Parsley
Cooking Instructions
Preheat the oven to 190C / 350F gas mark 5

Use a 7cm pastry cutter to cut out circles of bread to fit in a bun tin (the recipe assumes you can cut 2 circles per slice). In a small pan, melt 2 oz of butter with the garlic chips. Brush the garlic butter on both sides of the bread circles then press into the bun tin (taking care not to break them).

Bake in the oven for 10 - 15mins until they are golden and crisp. Take care, because they will quickly burn if left too long.

Meanwhile, make a white sauce: melt the last 1 oz of butter in a pan and add the flour. Gently fry the mixture over a medium heat for 2 mins. Add the milk and stir (a whisk is useful here) continually over the heat, until the sauce is smooth and thickens. Season with the parsley and salt and pepper to taste. Chop the mushrooms and add the the sauce.

When the bread cups are cooked, remove from the oven and fill each one with mushroom sauce.
