Prawns with Spinach

Ingredients
8oz / 225g shelled prawns8oz / 225g frozen or fresh spinach
2 onions, finely chopped
1 clove garlic crushed or chopped finely
4 tomatoes
1 tbsp vegetable oil
pinch of salt
Herbs & Spices
1/4 tsp (or to taste) Chilli Ground1 Chillies Whole
4 Cloves Whole
1 tsp Garam Masala
Cooking Instructions
Heat the oil in a large pan and gently fry the garlic, onions and tomatoes. keep the tomatoes whole, and let the cooking process break them down. Once the tomatoes have started to disintegrate and the onions are soft and slightly brown add the spices and salt. Stir to mix and cook for 1 minute. If using fresh spinach, wash and chop and place in the pan with the spicy tomatoes. if using frozen spinach add it straight into the pan. Cook on low heat for 10 mins or until the spinach is tender (fresh) or defrosted and heated through (frozen). Finally add the prawns and gently cook until done. You shouldn't need to add any liquid to this recipe as the spinach should provide enough moisture. If however, it seems dry when you add the prawns you can add a little water to it. Adjust seasoning as necessary.
