Spicy Bean Burgers

Packed full of goodness, these bean burgers make a great alternative to beef burgers. The chilli seasoning can be altered to taste.

Ingredients
1 tin chick peas, drained
1 tin red kidney beans, drained
2 medium sized carrots, peeled and grated
4 oz cooked sweetcorn (or tinned sweetcorn)
4 tbsp vegetable oil
1 medium onion chopped
salt and pepper to season
1/2 tsp marmite or equivalent
2 tbsp flour
Herbs & Spices
1/2 tsp Cumin Ground
1 tsp Coriander Ground
1/2 tsp or to taste Chilli Ground
Cooking Instructions
heat 1 tbsp oil in a frying pan and cook the spices for 1 minute until aromatic. Add the chopped onion and fry over a medium heat until soft.

Spread the flour on a plate and season well with salt and pepper.

In a large bowl, combine the cooked onions, the chick peas and the red kidney beans. Mash with a potato masher until the skins are broken and the beans start to blend together. Add all the remaining ingredients except the flour and mix together well. With wet hands, shape the mixture into burgers. Pat into the flour to coat, then fry gently in the remaining oil for 3 - 4 minutes on each side. You may have to fry in two batches.
