Coq au Vin

A classic french dish made easy. Chicken and onions cooked in a rich wine sauce. Great served with rice.

Ingredients
4 chicken joints
2 oz / 50g flour
4 oz / 110g bacon
4 oz / 110g mushrooms
10 small onions
1 oz / 25g butter
1 tbsp oil
1/2 pint / 275ml red wine
1/2 pint / 275ml chicken stock
1 tsp tomato puree
1 tsp sugar
salt and pepper seasoning
Herbs & Spices
1/4 tsp or to taste Garlic Salt
1/2 tsp Mixed Herbs
Cooking Instructions
Melt the butter and oil in a casserole dish. Brown the chicken on all sides, then remove. Chop the bacon and mushrooms and fry in the remaining oil for 2 - 3 minutes. Put in the casserole. Add the onions, garlic salt, flour, wine, stock, sugar, herbs and tomato puree. Make sure all is mixed well, then season with salt and pepper to taste. Add the chicken and bring to the boil. Cover and simmer gently for 1 hour or until the chicken is cooked. Stir occasionally to prevent sticking. Serve hot with rice.
