Salmon baked with Chervil

Salmon steaks baked in herb butter
Serves: 6
2 oz / 50g butter
salt and pepper seasoning
6 thick salmon steaks
Herbs & Spices
2 tsp Chervil
Cooking Instructions
Blend the butter and the chervil together and season well with salt and pepper. Pat into a sausage and wrap in clingfilm and refrigerate until firm. Season the fish steaks well.

Preheat the oven to 200C / 400F / gas mark 6

Cut 6 squares of tin foil big enough to wrap each steak up into a loose bag (if in doubt make the squares bigger rather than smaller). Oil the dull side of the foil squares and place a fish steak in the middle of each one. Divide the butter into 6 and place one on each fish steak. Fold edges of the foil up and fold / squash together to seal the fish in (make sure you get the side bits in) to make a sealed bag type parcel. Place the parcels on a tray and bake for 10-12 minutes.
