Mace is the dried outer covering of the seeds of the nutmeg tree (see entry under Nutmeg). It is indigenous to the Molucca Islands but is now cultivated widely in the tropical zone.
The 'blades' of mace have a flavour which is similar to that of nutmeg but which is not as strong.
They can be used whole in pickling spice or milk puddings (remove before eating).
