Orange Zest

This is kibbled, dried orange peel which imparts a bitter orange flavour.

It has varied uses but is an important ingredient in the making of mulled wine (see entry under Mulling Spices).

To use, soak the zest in hot water for 30 minutes then strain off the peel and use the liquid in cakes, puddings, sauces etc.
