The dried fleshy, tuberous rhizomes of a perennial plant indigenous to South East Asia but now cultivated throughout the tropics.

Culinary use of ginger usually calls for the finely ground root (see Ginger Ground) but whole root ginger is widely used in the preparation of pickling vinegar.
