Thyme

A native of the western Mediterranean area, this perennial plant is widely cultivated throughout Europe and the Middle East.

Thyme is a constituent of Mixed Herbs and Bouquet Garni (see separate entries).

The leaves have a sharp, aromatic flavour and are widely used in European and Middle Eastern cooking, being particularly compatible with meat and tomato based dishes.

It may also be used to make a refreshing tisane.
