The dried, unripe berries of the peppercorn vine (see Peppercorns Black) that have had the black outer skin removed by decortication.

They are considered to have a more bland flavour than black peppercorns.

Generally used ground, they are used particularly when the colour of black pepper might detract from the appearance of a dish such as in bechamel sauce.
